Hello & Happy Tuesday.
I hope everyone had a great weekend filled with warm weather and sunshine. I spent it the last four days up north at my cottage with my family and boyfriend. It was so nice to get away but do I ever love being home… I love being back in my bed and getting back into a routine.
Today I am sharing one of my all-time favourite recipes. I have been making this recipe for years and I swear it might just be one of the easiest and tastiest.
These chocolate chip banana breakfast cookies... yeah you heard me right chocolate for breakfast! Doesn’t get any better, does it? These cookies are made with just 3 healthy ingredients and loaded with healthy carbs, good-for-you grains, and just enough chocolate to feed that craving.
These cookies are perfect for breakfast or a healthy mid-day pick-me-up. There the ideal grab-and-go breakfast option… and not to mention how quick and easy they are to make.
2 medium ripe bananas
1.5 C. rolled oats
1/3 C. mini chocolate chips
Preheat oven to 350
Lightly spray a baking sheet or lay down parchment paper
Using the back of a fork, mash the bananas in a medium-sized bowl
Add the 1.5 C. of rolled oats
Gently stir the oats and bananas together until mixed
Add the 1/3 C. of mini chocolate chips
Stir until mixed throughout
Using an ice cream scooper, scoop and place on baking sheet
Press down with a fork to flatten
Bake for 8-10 minutes or until lightly golden brown. Remove from the oven. Let them cool, serve and enjoy!
Cookies can be frozen for up to 3 months
You can add any additional ingredients (ex. cranberries, walnuts, almond slivers)
These cookies do not spread so be sure to press them down with fork before baking
The more ripe the bananas are the easier it is to mix up
