No-Bake Energy Bites

Today I am sharing one of my all-time favourite recipes! No-bake Energy Bites! Yes. You read it right. No-bake! How easy is that? Whoever invented ‘energy bites’ is simply a genius! These no-bake energy bites are delicious and protein-packed, perfect for a morning run-out-the door breakfast or a mid-day snack. They are filled with simple pantry ingredients and are so easy to make. The ingredient combinations are endless; swap and replace certain ingredients with your ingredients of choice. You name it! There are options to make them nut-free, gluten-free, vegan… I dare you to experiment in the kitchen!

Peanut Butter Energy Bites


Ingredients:

  • 1 c. rolled oats

  • 1/2 c. shredded coconut

  • 1/2 c. semi-sweet chocolate chips

  • 1/2 c. natural peanut butter (or whatever you have)

  • 1/3 c. honey (I don't measure... I just pour... oops)

  • 2 tbl. ground flax seed

  • 1 tbl. chia seeds (optional)


Directions:

  1. In a large mixing bowl, stir all the ingredients together until thoroughly combined.

  2. Roll a tablespoon of the mixture in your hands to make a ball.

  3. Serve and enjoy!

Notes:

  • These can be made into Energy Bars - press firmly into a baking pan, and slice into bars.

  • You can use ANY kind of peanut butter.

  • You can toast the shredded coconut in a pan.

  • Stick to mini chocolate chips - they mix easier.

  • You can add 1 tsp. vanilla extract for extra flavor.


Ingredient Ideas:

  • Swap the chocolate chips out for dried fruits (cranberries, raisins, etc.,)

  • Add spice for additional flavor (pumpkin pie spice, cinnamon).

  • Add your favourite protein powder for extra protein.

  • All chocolate lovers! Add unsweetened cocoa powder!

Energy Bites should be stored in a Tupperware container in the fridge for up to one week. They do freeze wonderfully and can be stored in the freezer for a couple months.
